Free radicals are atoms or molecules with an odd (unpaired) number of electrons and can be formed when these atoms are attacked by various things in our environment. Once formed these highly reactive radicals will repair themselves by stealing an electron from another atom or molecule, which in turn becomes a free radical, thus creating a chain reaction of destruction. The most serious danger comes from the damage they can do when they damage the molecules of important cellular components such as DNA, or the cell membrane. Cells may function poorly or die if this occurs and damaged DNA may replicate itself. To prevent free radical damage the body has a defence system of antioxidants.
What is an antioxidant?
Antioxidants are molecules that can safely absorb free radicals and terminate the chain reaction before vital molecules are damaged. Although there are several enzyme systems within the body that scavenge free radicals, the principle micronutrient (vitamin) antioxidants are vitamins A, C and E. Additionally, selenium, a trace metal that is required for proper function of one of the body's antioxidant enzyme systems, is sometimes included in this category. The body cannot manufacture these micronutrients so they must be supplied in the diet.
The vast majority of health professionals encourage the consumption of antioxidant-rich fruit and vegetables, for example the '5 A DAY' campaign. From our own experience we see a high correlation between good antioxidant levels and wellness. It's a fact of life that most people are not able to maintain a diet rich enough in antioxidants to support a peak level of health.
